Celebrity chef Peter Kuruvita has been in the culinary industry for more than three decades. Ten years ago, he realised that the seafood supplied to his restaurants were not sustainable when he received a box of New Zealand snappers that were the same in size daily. Through his work, he wants to educate diners to eat sustainably.
